WHAT DO WE DRINK DURING SPRINGTIME?

Easter is coming on Sunday 9 April this year. Are you ready for the warmer weather, and your Easter festivities? As the weather warms and our taste buds start to crave fresh and clean wines, it’s time to start picking out wines for their lightness and simplicity. Let's pair the wines with sunglasses, 25-degree days, and the smell of fresh-cut flowers.

CHAMPAGNE & SPARKLING
Good bubbles don’t have to be reserved for celebrations. During warmer weather, its fresh acidity and fresh flavours, along with the soft effervescence from the bubbles, make it refreshing and palate-cleansing. Crisp, light bubbles complement the lighter ingredients we usually have in springtime.

WHITE
The acidity in white wine enhances its refreshing, crisp qualities, making white a go-to in warmer weather. When the weather is warmer and humid, opt for dry whites with high acidity and light-to-medium body wines as they tend to be crisp and refreshing. Unoaked white, Sauvignon Blanc, pinot gris, etc have a lighter, fresher taste. Chablis is another great example of this season. The minerality, the high acidity, and the freshness work very well with your sunglasses.

ROSÉ
Enjoy the ocean breeze on a relaxing weekend afternoon (or any afternoon) on the beach. All you need is a chilled Rosé for relief. Rosé is an incredibly versatile wine that shouldn’t be reserved exclusively for the summer months. It is a refreshing choice that pairs well with seasonal foods like spring vegetables, lighter meat proteins, or fish and celebrates the sun with notes of red berries, flowers, and citrus.

RED

Glazed ham or Lamb rack are always served on the Easter table. Lighter-to-medium-bodied reds that have higher acidity and lower tannin are excellent for enjoying this Easter fest. Glazed ham calls for a pinot, the lower tannin, and high acidity Pinot Noir will do the job. It has cherry fruit on the nose, a little spice on the palate, and will leave liberty for whatever garnish you offer. Rack of lamb is often encrusted with lots of herbs and spices. Beaujolais makes a lovely pairing with it. The rich flavour and complex aromas with the dark berry fruit complement lamb’s distinctive flavour.

SWEET
Carrot cake is an Easter dessert that can be paired with a variety of wines. A Riesling or Gewürztraminer has enough sweetness to balance out the spices in the cake, and the acidity will help to cut through the richness of the frosting.

Larmandier-Bernier Vieille Vigne du Levant Millesime 2013 should be tasted for its own qualities as an aperitif, to accompany poultry with morels, and this cuvée will happily stand its ground with dishes cooked in cream. It must be allowed time to open up so that you can appreciate its power, complexity, and exceptional length. It should be kept for 2 years (it will gain in-depth) and much longer, even, if that’s how you like it.
