Brown Butter Blondies

I've always wanted to bake Blondies, looks like the time is now! Even before having one or even baking one I was kinda sure that I'll like it.

I was sure about liking this Brown Butter Blondies because it has all my favorite things in it plus the texture. It has brown butter which gives a nutty flavor, there is brown sugar which I like for its caramel flavor and there is the fudgy dense texture which I like to have for a change from the usual cakes. Don't forget the nuts, it does give a crunch.

If you like the above-said things, then you should definitely give it a try. You can have it plain or you can just drizzle some melted white chocolate on top and add some pistachio (or any nuts) to fancy it up a bit ;)

Brown Butter Blondies

Ingredients

  • 1/2 cup Unsalted butter
  • 1 cup Plain flour (maida) (1 cup measured)
  • 3/4 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup (packed) Light brown sugar
  • 1/4 cup Sugar
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 3/4 cup chopped walnuts (I used same amount of cashewnuts)

Instructions

  • Preheat the oven to 180 C, 10 mins before baking. Grease and line the bottom of an 8×8 baking dish with parchment paper.
  • Make the brown butter: In a small pan set over medium heat, melt the butter and cook until it turns brown and smells nutty. Try not to walk away from the butter, as it can go from brown to burned very quickly. Pour the brown butter into a large mixing bowl and let it cool slightly.
  • Whisk together the flour, baking powder, and salt to combine.
  • Add both sugars to the brown butter, and mix on medium speed with a hand mixer until well combined, about 2 minutes. Add the eggs and beat for another 2 minutes, until the mixture has lightened in color. Add the vanilla, and beat for 30 seconds.
  • With the mixer on low, slowly add the flour mixture, and stop mixing right before the flour disappears.
  • Add the chopped walnuts (cashewnuts), then finish stirring by hand with a spatula, just until the flour is fully mixed in.
  • Pour the mixture into the prepared pan and bake for about 35-40 minutes, until a toothpick inserted into the center comes out clean. Cool on a wire rack, and cut into squares. Enjoy!

Notes

You can use walnuts, almonds, cashews basically any nuts of your choice. 
Though the blondies can technically be eaten right away out of the oven, they taste better and cut more cleanly after they've cooled for a few hours.
