Ingredients


For the Brownies

  • 1 and 1/2 cups organic all-purpose unbleached flour (gluten-free oat flour may be used as a substitute)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup cocoa powder
  • 1 cup Florida Crystals® Regenerative Organic Light Brown Sugar
  • 1/3 cup + 1 tbsp avocado oil
  • 1/3 cup thick coconut yogurt
  • 2/3 cup dairy-free milk
  • 1/2 tbsp vanilla extract

For the Peanut Butter Caramel

  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla extract

For the Topping

  • 1/2 cup toasted coconut flakes

Instructions

Step 1

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a square baking pan with parchment paper.

Step 2

Prepare the Brownie Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and raw cane sugar. Add in the avocado oil, coconut yogurt, dairy-free milk, and vanilla extract. Mix until well combined and smooth.

Step 3

Bake the Brownies: Pour the brownie batter into the prepared pan and spread it evenly. Bake in the preheated oven for approximately 23 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Step 4

Prepare the Peanut Butter Caramel: In a small saucepan over very low heat, combine the peanut butter, maple syrup, and coconut oil. Stir continuously until the mixture is well combined and smooth- this should only take a few minutes. Remove from heat and stir in the vanilla extract.

Step 5

Assemble and Top: Once the brownies are done baking, allow them to cool for a few minutes. Pour the prepared peanut butter caramel over the warm brownies, spreading it evenly with a spatula. Sprinkle toasted coconut flakes over the caramel layer.

Step 6

Chill and Serve: Place the brownies in the refrigerator for at least an hour to allow the caramel to set. Once set, cut into squares and serve.
