Gin is a powerhouse spirit that provides a sturdy base to countless cocktails, including spirit-forward drinks like the Martini and lighter, citrusy drinks like the Tom Collins and Gimlet. That versatility shines in the London Light, an easy-to-make recipe by Michael Waterhouse, a longtime New York City bartender and bar consultant. 

Waterhouse starts with Bulldog gin, an assertive London dry gin that sports a robust juniper profile that pairs well with the drink’s other ingredients. He then enlists pomegranate juice for its mix of sweet and tart flavors, plus fresh grapefruit juice. The grapefruit juice is a natural pairing with gin: The duo is found in several other cocktails, including the classic Greyhound. A topper of club soda gives the package a vein of bubbly effervescence.

The London Light is tart, refreshing, and a good choice on warm days when you don’t want your drink to weigh you down. Aside from the flavor, the best part of this drink is how easy it is to make. Keep the shaker on your bar cart because all you need is a measuring device and a highball glass, as this cocktail is made directly in the glass.

Ingredients

  • 2 ounces Bulldog gin

  • 1 ounce pomegranate juice

  • 1/2 ounce grapefruit juice, freshly squeezed

  • Club soda, chilled, to top

  • Garnish: grapefruit twist

Steps

  1. Add the gin, pomegranate juice and grapefruit juice to a highball glass filled with ice.

  2. Top with chilled club soda, and stir gently to combine.

  3. Garnish with a grapefruit twist.
